The fine balance between acidity, alcohol and a generous full body makes this an excellent partner for salmon tartare, steamed cockles or a typical local Catalan dish of salted cod served with vegetables.
The Acustic Blanc is a versatile white wine with a multifaceted, complex personality thanks to the four different grape varieties that make up the blend. The dominant variety is Garnacha Blanca, which helps to give a rounded, creamy texture to the wine, followed by Macabeo and a drop of Garnacha Tinta and Pansal which is also known locally as Xarel.lo.
Winemaker Albert Jané sources all of the grapes for this distinctive white from 35 to 80 year old vines planted across the Montsant wine region. Here the intense arid climate, organic farming and poor soils help to produce incredibly flavourful fruit that Albert harvests by hand. He then ferments 70% of the wine in stainless steel tanks and the remaining 30% in new French oak barrels before ageing the wine on the lees for 4 months to add extra complexity.
