Castello Monsanto is a Tuscan farm located in the Elsa Valley, in the province of Florence. Purchased in 1961 by Aldo Bianchi, it is now managed by Fabrizio Bianchi and his daughter, Laura. The estate, which extends across 70 hectares of land, boasts great biodiversity, thanks to the alternation of vineyards, olive groves, cypress trees, brooms, oaks, laurels, heathers, and strawberry trees, creating the perfect natural environment for high-quality viticulture and olive growing. The crops benefit from exceptional conditions, with soils rich in galestro (shale rock) and a microclimate tempered by the Mistral winds.
Castello Monsanto extra virgin olive oil is a blend of native olives from the Correggiolo, Moraiolo, Leccino, and Frantoio varieties. After manual harvesting and transportation to the mill, the oil is produced mechanically and cold-pressed to maximize its full aromatic expression and preserve its organoleptic characteristics.
The result is a lean and aromatic olive oil that reveals a bright color with green tones, tending to yellowish with aging. On the nose, it displays a fresh and fragrant character with fruity and chlorophyll notes. On the palate, it is balanced, round, and smooth, with a pleasant hint of spiciness and a delicate bitter aftertaste on the finish. Thanks to its harmonious and delicate flavor, it pairs perfectly with vegetable and legume soups, vegetarian recipes, and grilled white meats.
