How does Cabernet Sauvignon age?

Cabernet Sauvignon wines tend to mature well, as the tannins soften with age, that is, giving the wine an opportunity to become more complex and subtle. With aging, black fruit flavours can develop into more of dried fruit or fig-like characteristics, with the secondary aromas of leather, tobacco, and cedar. Although some Cabernet Sauvignon wines are quite pleasant when young, the best examples usually hit their prime between 5-15 years post vintage, depending on the wine’s structure, acidity, and winemaking style.
