Recaredo Cava Reserva Particular 2005

This sensational Gran Reserva was first made in 1962 by Recaredo’s founder, Josep Mata Capellades, along with his sons, Josep and Antoni. His desire was to craft a Cava that would express the elegance and subtleties of lengthy cellar ageing while preserving the sassy vivaciousness of its youth. The iconic Reserva Particular was thus born, lovingly made year after year by the family from two classic Cava varieties, Xarel-lo and Macabeu which are fermented oak barrels and finished with over 10 years of maturation in the bottle.
Easily the equal of a top Champagne, this traditional method sparkling wine opens with notes of sweet brioche, citrus and ripe apricots which carry thought to the palate. The first sip reveals a soft, delicate mousse, a well-defined minerality and a surprisingly youthful freshness. The depth and complexity of flavours make this a spectacular special occasion wine to enjoy with loved ones.
Today Recaredo is run by Josep’s grandchildren who remain loyal to his vision to create fabulous long-lived Cavas which are still matured in the cellar he dug beneath his house in 1924. While not losing sight of the past, the third generation has also made their own mark. In 2006 the family decided to start using biodynamic practices in the vineyards and their Cavas will now be officially certified by Demeter.
