When English doctor Christopher Rawson and his wife Mary Penfold arrived in Australia in 1844, they bought a 200-hectare estate in Adelaide and founded the Penfolds winery. For many years the company has concentrated its production almost exclusively on brandy and fortified wines. But in the 1950s, when Max Schubert joined the Penfolds adventure, he infused the estate's wines with the elegance and aging capacity of the great Bordeaux wines that fascinated him so much. Success was not long in coming when the cellar master signed his famous Grange cuvée, which crossed Australian borders to win over wine lovers from all over the world. Even today, cellar master Peter Gago continues to perpetuate this tradition of excellence.
The Bin 8 Cabernet Shiraz from Penfolds is a red wine produced from a blend of 52% Cabernet Sauvignon and 48% Shirazrapes come from various vineyards and appellations (McLaren Vale, Barossa Valley, Wrattonbully, Padthaway, Coonawarra). The wine is aged for 12 months in French and American oak barrels.
The wine is perfectly balanced and supported by a nice acidity. The nose reveals aromas of blackberries and plums and then sweet notes of violet. On the palate it reveals aromas of dark chocolate and tobacco, harmoniously combined with notes of black fruit. The finish is long and the tannins are soft and refined. Have it with beef and meat stews.
