Bright ruby red in colour, the nose shows notes of cherry, raspberry, strawberry and a hint of chocolate. The palate is both elegant and powerful with fine tannins and great acidity. Flavours of plum, raspberry, chocolate and a savoury hint of mushroom really defines this excellent Pinot Noir. There is a hint of oak which helps the development of this beautifully complex and superb wine. The finish is long with just a touch of chocolate at the end. A great match with pasta, grilled meats, pork dishes and cheese.
Pegasus Bay Winery prides itself on producing the highest quality fruit with minimal intervention that expresses the terroir and results in stunning wines. Sustainable vineyard management techniques are used including low crop levels and minimal handling of fruit throughout the process. Gentle pressings, malolactic fermentation from indigenous yeast and clarifying the wine by settling all go into to producing top quality, very interesting wines.
Using traditional wine making methods from Burgundy, the grapes were hand harvested at different stages to ensure optimal ripeness. The fruit was de-stemmed and fermented in small fermenting vats. Following fermentation, the wine was placed into small oak barriques of which 30% was new oak. A secondary fermentation (malolactic) then happened before maturing for 18 months in barrel.
