Originally from Quebec, Patrick Piuze moved to Burgundy, France, in 2000 and inaugurated his wine business in the Chablis region with the 2008 vintage, after having worked for prestigious producers such as Olivier Leflaive, Verget, and Domaine Jean-Marc Brocard. Pluze does not own any vineyards but sources its grapes from some of the best plots in the area, most from very old vines, thanks to long-term partnerships with selected winemakers.
The Chardonnay grapes are carefully sourced and harvested manually from the extraordinary terroir of the Bougros Grand Cru, one of the 7 grand crus of Chablis, located north of the municipality. Fermentation takes place with indigenous yeasts as for all other Patrick Piuze wines.
The wine reveals a beautiful straw-yellow color with brilliant tones. Its aromatic profile is fresh and broad with fruity notes of apples, melon, plum, and stone fruit, followed by hints of white flowers. On the palate, it is fresh and mineral, round, and with a lively acidic streak. It has a medium-full body and a persistent and subtle finish. Excellent with roasted fish or sea bass in a salt crust, it also goes well with mollusks and crustaceans.
