The Pasqua winery is one of the most important in the Veneto region and has developed, since 1925, around the homonymous family of Apulian origins. Today, the company covers 322 hectares of vineyards that produce a varied portfolio of wines that includes the major Veneto denominations. Through the enhancement of areas such as Castello di Montorio, Mizzole, and Monte Vegro, where the most ambitious labels are born, the Pasqua family aims to rediscover the character of the traditional wines of Valpolicella.
Amarone Mai dire Mai is produced with grapes from the Monte Vegro vineyard located 350 meters above sea level, between the Val d'Illasi and Val di Mezzane. The soil is of basaltic and calcareous origin; this guarantees wines characterized by great minerality. The harvest is manual and the grapes are left to dry for 4 months to concentrate the sugars. After fermentation, the wine is aged in barriques and tonneaux for 24 months.
This Amarone has a broad and fruity olfactory profile, with intense aromas of undergrowth, cherry jam, cedar wood, cocoa, and spicy hints in the finish. On the palate, it reveals great concentration and elegance. It is rich, warm, and complex. The tannins are firm but elegant. The acidity is well-balanced. The finish is long and complex. It is a powerful wine with a great personality that goes beautifully with aged cheeses, red meats, and even dark chocolate.
