The Paitin winery, located on the Serraboella hill and today managed by Giovanni and Silvano Pasquero Elia, is one of the oldest wineries of the Langhe. It has been present in the area since at least the nineteenth century. For some years the company has been approaching organic and biodynamic practices in the vineyards. The restored ancient cellar, which retains an impressive charm, is located in an area with rich and clayey soils that contribute to the creation of wines of considerable structure.
The Barbera grapes are selected and harvested manually from forty-year-old vines. The wine is aged in Slavonian oak barrels for at least 18 months and in steel for a further 2 months before being bottled.
Paitin's Barbera d'Alba Superiore "Campolive" is a red wine with a ruby color tending towards garnet. The scent recalls hints of ripe cherries combined with floral notes. On the palate, it shows an excellent structure, full-bodied, balanced, and persistent in the finish. It is the perfect wine for pasta with meat sauces and, in particular, with Bolognese lasagna, but it also goes well with medium-aged cheeses.
