Manincor’s Eichhorn is a Pinot Bianco that benefits greatly from the estate’s full conversion to biodynamic, a recent undertaking and modern result of their pursuit of the highest quality grapes. It’s vibrant bright yellow color is a refreshing introduction, highlighted by greenish hues along the rim. Mild, fruity aromas of ripe apples abound with subtle elements of delicate jasmine and white blossoms opening smoothly in volume with aeration. With its rich and even mouthfeel, the Eichhorn’s naturally-rich texture and full body will delight devoted Pinot Bianco fans. The palate is luscious, with a light, tangy zest leading effortlessly to mineral notes reminiscent of wet limestone on the finish interwoven with light lingering hints of fruit.
The distinct minerality of this wine benefits from the site’s sand, clay and crumbled porphyry blend to host the vines along with the mild and breezy micro climate at 300 m above sea level. estate’s biodiversity is exemplified with the use of yeasts that exist naturally in the vineyard itself. The wine experiences a level of fermentation that is somewhat uninhibited, complemented by its four month maturation in oak barrels.
