Isabelle and Denis Pommier moved to Burgundy in 1990, to produce wine from 2 hectares of vineyards inherited from the family. The first harvest dates back to 1994, and with the wine produced from that vintage, they immediately achieved great success at the Chablis wine competition. Today, the company located in Poinchy, has over 20 hectares of vineyards certified organic since 2014.

Chablis Premier Cru Fourchaume is a subtle and elegant wine produced with Chardonnay grapes selected and harvested manually from vines aged between 25 and 50 years located in the La Chapelle Vaupelteigne village and planted on clayey-limestone soils. Fermentation takes place for 2 thirds of the grapes in steel and a third in oak barrels. The finished wine is then left to mature for 18 months before being put on the market.

In the glass, the wine reveals a brilliant color with straw yellow tones and a fresh and broad aromatic profile with pleasant floral, citrus, and white fruit notes. On the palate, it is mineral and juicy, with a marked acidity and liveliness. The finish is long and pleasantly refreshing, with mineral and iodized hints. Excellent with oysters, but also try it with fish and seafood.
