Hentley Farm is a family-run winery located in Seppeltsfield, not far from the banks of Greenock Creek in the Barossa Valley. It was founded in the late 1990s by Alison and Keith Hentschke. Today, the estate spans approximately 150 acres and produces excellent Australian wines with a focus on single-vineyard ones.

This wine is the result of Keith Hentschke's personal, counter-intuitive decision to plant Cabernet Sauvignon in this area, where Shiraz reigns supreme. The grapes come from three isolated plots on the estate, where the vines benefit from eastern exposure and shallow red clay soil on a crushed limestone substratum. Yields are limited, and after fermentation, the wine rests for nine months in oak before bottling.

The result is a fresh and vibrant wine, generous and rich, displaying elegant aromatic intensity. On the nose, fruity notes of blackberry, currant, plum, and dark cherry emerge, followed by aromatic Mediterranean herbs. On the palate, it is well-structured and round, with firm, well-integrated tannins and a velvety mouthfeel. It is concentrated, with a medium-long, warm finish. It pairs well with all red meats, grilled or roasted, and it’s absolutely perfect with spicy beef stews.
