François Chidaine is considered one of the most important wine producers in the Loire Valley. His estate was founded in 1989, in Montlouis-sur-Loire. Since then the company has greatly expanded its vineyards, reaching approximately 45 hectares, cultivated biodynamically. Here the main grape variety is Chenin Blanc, but the company also grows Sauvignon Blanc, Grolleau, Cabernet Franc, Côt, and Pineau d'Aunis grapes.
Francois Chidaine Vouvray Clos Baudoin is an elegant white wine made from Chenin Blanc grapes sourced from a single vineyard, located in Vouvray, on soil composed of superficial clay and chalk. The vines are approximately 16 years old and yields are low. After fermentation, the wine is left to refine for 6-8 months on the lees.
The wine has a straw yellow color and an expressive and broad aromatic profile, with notes of wild flowers, acacia and mimosa, ripe yellow fruit, and some hints of honey. On the palate, it is fresh and lively, juicy and elegant. It has a medium body and a long and persistent finish that recalls floral notes. It is perfect with cod and sea bass.
