DoReMi Tibaani 2020

Founded in 2012, the DoReMi winery is located in the Kakheti region, along the right bank of the Alazani River. The wines are all made from native Qvevri grapes, which are large hand-made inground clay vessels used to ferment and age wine. Qvevri can range in size from 250 liters to 2500 liters. The lightly squeezed must is fermented with the skins, with wild yeasts and without any additives. At the end of fermentation, the Qvevri are sealed and covered with earth until spring. During the process, the solids in the wine slowly sink to the bottom of the Qvevri and the clear wine rises to the top.

The DoReMi Tibaani is 100% Rkatsiteli wine. Grapes are grown in the historically important Tibaani region, one of Georgia's recognized appellations.

The nose of this amber wine is characterized by the most beautiful floral tones, wildflowers and fresh herbs, with some final tart honey aromas. On the palate, there is fresh pear, mirabelle plum, and apple tart. The fine acidity and beautifully integrated tannins give the wine a stable backbone. It is elegant and extremely drinkable.

Try it with crayfish, crab, grilled white fish, or rabbit terrines.
