Parts of the Tollot-Beaut cellar are some 250-years old, with the domaine itself dating back to the late 1880s when François Tollot first started to plant vines in Chorey-lès-Beaune. A couple of generations later, the family became one of the first in the Côte d'Or to start bottling their own wines under their name and to export their wines to the US. Today the property is still owned by the Tollot family, and is run by cousins Nathalie, Jean-Paul and Olivier.
The family owns a total of 24 hectares in Chorey-lès-Beaune, Savigny-lès-Beaune, Beaune and Aloxe-Corton and makes a wide range of wines from entry-level Bourgogne right up to Grand Cru. Their classic Chorey-lès-Beaune comes from three select plots which are all farmed organically and planted on limestone, gravel and clay soils.
Each plot gives different characteristics, with the first parcel on the southern side of the village giving more perfumed fruit that is usually harvested earlier. At the second site on the north side the fruit tends to be darker and richer with more tannins, and the third in the centre of the village gives small quantities of very concentrated fruit. The result is a complex, multi-layered Burgundy that has subtle oak influence to allow the brilliance of the terroir to shine through.
