Located in Lujan de Cuyo, Domaine EdeM is an Argentine boutique winery specializing in low- and zero-alcohol wines. The winery was created in honor of Elena Maza, wife of Nicolás Catena and mother of Laura Catena, who commissioned this innovative project from the Catena Institute of Wine (founded in 1995 in Mendoza) to offer her mother and the world a high-quality, dealcoholised wine they could enjoy freely.

Domaine EdeM N.0 Rosae Dealcoholised Sparkling Rosé is actually made in Spain with 100% Airén grapes sourced from the La Mancha wine region, near the ancient city of Toledo. After harvest, fermentation takes place at a controlled temperature to preserve the wine's aromatic palette and freshness. The alcohol is then removed through vacuum distillation. Finally, the wine is infused with rose petals to enhance the wine's floral character and add a fragrant touch.

In the glass, the wine reveals a bright, luminous color with pale salmon tones. Its aromatic profile is fresh and expressive, with fruity notes of citrus and pear, and herbal and floral hints. On the palate, it has a creamy texture thanks to its fine bubbles. It is lively, round, and smooth, with an elegant and delicate character. The finish is refreshing and zesty. It is perfect as an aperitif and pairs well with a wide variety of summer dishes such as prosciutto and melon, fruit salads, or raw shellfish and seafood.
