The Limoux region has a strong tradition of making traditional method sparkling wines which dates back to 1531 when the monks of the Abbey of Saint Hilaire produced the world’s very first sparkling wine in their cellars. Four centuries later the cooperative of Sieur d’Arques was created by a group of local winemakers with a passion for producing top quality sparkling and still wines from their well-sited vineyards.

The Toques et Clochers Edition Limite is made with the cooperative’s fine Chardonnay grapes which are grown on fabulous chalky soils close to the foothills of the Pyrenees. In accordance with local tradition they also add smaller amounts of Chenin Blanc and the rare indigenous Mauzac grape to add an aromatic character to the wine.

The result is a gorgeous dry bubbly which is crafted using the same traditional sparkling wine method used in the Champagne region. The nose opens with delicate aromas of apples, pears, lemon zest and hints of brioche from the 12 months of ageing on the lees, while the palate displays smooth bubbles, crisp acidity and a very clean finish. The freshness and easy-going nature of this Cremant makes it an excellent choice for celebrations or to serve as a refreshing aperitif on a hot summer’s day.
