The COS Sicilian winery was founded in 1980 in Vittoria by three wine-loving friends: Giambattista Cilia, Cirino Strano, and Giusto Occhipinti. They bought an old estate and soon became some of the most influential winegrowers in Sicily. They were particularly interested in the Cerasuolo di Vittoria wine made from a blend of the indigenous varieties Nero d'Avola and Frappato. In 2000 COS decided to convert to biodynamic agriculture, cultivating the vineyard in order to produce the purest wine possible.
The Aestas Siciliae wine is a blend of white grapes from 10-year-old vines, grown at an altitude of 200 meters on soils of Pliocene origin and calcareous matrix. After a delicate pressing of the grapes, harvested with a late harvest, spontaneous fermentation takes place in concrete tanks or even in Spanish amphorae, called Tinajas.
The wine shows an intense golden color and an intense aromatic profile that recalls the warm scents of Sicily: honey, dry stone fruit, citrus peel, carob, and iodized notes. On the palate, it is a sweet and velvety nectar, concentrated and persistent but never cloying. Its sweetness is perfectly balanced by the right amount of salt and freshness. Perfect with custard and fruit-based desserts and blue cheeses.
