A true gem of Italy’s sparkling producers is Corte Aura, a winery founded in 2009 by Federico Fossati who puts the utmost care and time into his winemaking. Drawing on the symbol of a turtle, Fossati focuses on slow, deliberate moves in the winery with an emphasis on extended aging on the lees. The long aging period of over 30 months gives the wines time to fully develop and express themselves. For this reason, the sparkling wines of Corte Aura demonstrate restrained balance, layered flavor profiles, and long-term aging capabilities. Found in Italy’s Lombardy region, Corte Aura’s production is over 100,000 bottles annually with grapes being sourced from several vineyards within Franciacorta municipalities.
The Franciacorta Saten highlights the Chardonnay grape being made from 100% Chardonnay. Spending extended time on the lees, the crisp, tight bubbles of the Saten are nuanced with a creamy mouthfeel. White flowers, lemon zest, and honeysuckle are standout aromatics. The palate is fresh and mineral-driven with a generous nuttiness, hints of vanilla, and green apple.
