Franciacorta is a sparkling wine from the Italian Province of Brescia produced using the traditional wine making method from grapes sourced within the boundaries of Franciacorta. One producer that is championing quality Franciacorta to the international market is Corte Aura. Founded in 2009 by Federico Fossati, the winery produces over 100,000 bottles annually and sources all grapes from vineyards within the Franciacorta municipalities.

A principle philosophy at Corte Aura is to take things slowly and allow time for proper aging and wine development to occur. To illustrate this concept, the winery uses the symbol of the turtle. All wines are aged on lees a minimum of 30 months.

Considered a top cuvee from Corte Aura, the Pas Dose is a blend of 80% Chardonnay and 20% Pinot Noir. The wine was aged on lees for 24 months with zero dosage giving a lean, crisp flavor profile with structured hints of round creaminess. A beautiful straw color dances in the glass with small, dainty bubbles. The nose is a bouquet of juicy citrus, tropical fruits and white flowers, with a lingering yeastiness. An acid-driven sparkling, the palate is greeted with tart, bitter lemon, unripe nectarine, toasted hazelnuts, and warm biscuit. It is well-balanced with a persisting finish, perfect to enjoy on its own or with a variety of foods like soft cheese, fatty fish, chicken, cold meats, and shellfish.
