Celene Opale Cremant de Bordeaux Blanc de Blancs

Celene has been producing exceptional sparkling wines since 1947 using prime vineyards on both banks of Bordeaux in the Entre-deux-Mers region. Set in the village of Haux, the winery works with trusted partner growers who produce top quality fruit across a variety of terroirs. After vinification the wines are aged in their 18th century cellars which were dug out of the limestone rock on the Right Bank of the Garonne. Here temperatures consistently stay at 13°C with a constant humidity which creates ideal ageing conditions for sparkling wines.
Their Opale cuvee is a Blanc de Blancs which means it is only made from white grape varieties. This gives the sparkling wine a refined profile with plenty of balance and refreshing acidity. The grapes selected for this wine are carefully harvested by hand and fermented in stainless steel tanks. The young wine then undergoes a secondary fermentation in the bottle, the same process as used for Champagne, and spends 12 months maturing in the cellars.
Composed primarily of Semillon along with a smaller proportion of Muscadelle and a dash of Sauvignon Blanc, this cuvee is bursting with aromas of delicate white flowers, ripe orchard fruit, and hints of toast and fresh pastries. The crisp, fruity flavour profile means it's a refreshing aperitif or great partner for seafood, salads, mature cheeses, and grilled fish.
