Bibi Graetz began producing wine in Tuscany in 2000, sourcing grapes from a vineyard around the medieval castle of Vincigliata, purchased by his family in the 1960s. Today Bibi, a character gifted with great creativity and self-taught in wine, is considered one of the most eclectic and interesting producers in Tuscany, obtaining excellent reviews and awards over the years. His company covers approximately 50 hectares of vineyards, in which essentially native vines of the region are grown.
Testamatta is a 100% Sangiovese wine. The grapes are sourced from 5 vineyards located in the municipality of Fiesole, with an average age of 80 years, on soil rich in clay and marl. After vinification in barriques with native yeasts, the finished wine is aged for 2 years in French barriques (of which 10% are new) and then left in the bottle for 6 months.
The wine has a bright ruby-red color. Its aromatic profile is broad and captivating with notes of red and black cherry, some hints of sweet spices, and nuances that recall leather and tobacco. On the palate, it is characterful, complex, and full-bodied. It has firm tannins and a marked acidic streak. The finish is long and aromatic. It is ready to drink now, but can remain in the cellar for several years. It goes perfectly with grilled or roasted red meat.
A Birthday to Remember with DAOU & Colomé Celebrating my mother’s birthday was made even more special thanks to two incredible wines—DAOU Cabernet Sauvignon 2021 and Colomé Auténtico Malbec 2020. The star of the evening was undoubtedly the DAOU Cabernet Sauvignon. From the first sip, it enveloped us in its rich, velvety embrace. The deep dark fruit flavors, hints of cocoa, and perfectly balanced oak made every glass feel like a true indulgence. It was bold yet elegant, a wine that effortlessly brought warmth and joy to our gathering. Seeing my mother savor each sip with a smile made it all the more memorable. The Colomé Auténtico Malbec also delivered beautifully, with its pure expression of high-altitude Malbec. It was powerful, with ripe blackberries, spice, and a smooth, lingering finish—an excellent complement to the evening. These wines didn’t just enhance our meal; they became part of the celebration, elevating every toast and conversation.
