This stunning organic Premier Cru Chablis is a textbook expression of the region’s crisp and minerally Chardonnay wines. It is the handiwork of Didier Defaix, son of Bernard Defaix, whose family have been making wine here for at least five generations. Today the family own 25 hectares of prime vines and they personally take care of every aspect of the winemaking process from growing the grapes to bottling the wines.

The Côte de Lechet has a reputation in Chablis for producing remarkably ageworthy wines thanks to the orientation of the slopes which enjoy morning sun exposure, ensuring the grapes ripen slowly. This helps to create aromatic wines with plenty of freshness and minerality from the stony soils which are packed with fossils.

Didier’s expression is bursting with vibrant citrus notes on the nose and mouthwatering acidity thanks to the fermentation in stainless steel tanks. The first sip is refreshing with plenty of lemon zest, grapefruit and a stony minerality which instantly connects the wine with its terroir. A fantastic wine to serve as an aperitif or to pair with a wide range of dishes such as salads, sushi, fresh oysters and pan-fried fish dishes.
