Volarević is a Croatian winery located in southern Dalmatia. Starting with a farm and nursery (the largest in the country), in 2005, the family (father and four children) decided to dedicate themselves to building a vineyard and producing wine. The estate's vineyards, which extend over 600 square meters in the Komarna area, enjoy favorable soil and climate conditions for quality viticulture, with southern exposure, karst soils, high summer temperatures, cool nights, and constant winds. The area's wild nature and biodiversity also contribute to a perfect natural environment.
The indigenous Posip grape is harvested by hand at night from a vineyard on the island of Korčula. Here, the vines are rooted in deep, red soils low in minerals, which favor the development of good structure. After fermentation with natural yeasts, the wine remains on the lees for three months.
The result is an expressive and fragrant wine with notes of grapefruit and lime, peach, and ripe white fruit on a mineral and dried herb background. On the palate, it is rich and creamy, rounded, mineral, and harmonious, with a refreshing acidity and a long finish reminiscent of honey and saline notes. Try it with oysters or goat cheese.
