Valdemar Estate is the American branch of Bodegas Valdemar. Founded in 2019 in the Walla Walla wine region of Washington State, this winery combines the best of Spanish winemaking traditions, the pioneering approach of the Martinez Bujanda family and the Washington state terroir, to produce high-quality wines.
Entre Nosotros is a wine made from Cabernet Sauvignon grapes, with additions of Merlot, Petit Verdot, and Syrah from the Stone Valley, Seven Hills, Pepper Bridge, Dionysus, Klipsun, and Lefore vineyards, all located in the Columbia Valley AVA. After manual harvesting and careful bunch selection, fermentation takes place at a controlled temperature in stainless steel tanks. The wine is then aged in French oak barrels (29% new) for approximately a year and a half.
The result is an elegant and expressive wine with an intense aromatic profile and notes of blackberries, plums, and blueberries, followed by hints of wood and toasted dark chocolate. On the palate, it is concentrated and rich, with a full body and balanced acidity. It is smooth and fruity with a long finish reminiscent of a touch of mocha. It is excellent with beef brisket and short ribs.
