La Chablisienne is a century-old wine cooperative in the village of Chablis, Burgundy. It was created just in 1923, from the joining of a group of local winemakers chaired by Abbé Balitrand and today consists of about three hundred members with plots scattered between some Grand Cru and Premier Crus among the most prestigious ones in Chablis.
This particular wine comes from 25-year-old Chardonnay vines planted on the left bank of the Serein River. opposite the Premier Cru Fourchaume. Here, the vines enjoy the classic Kimmeridgian limestone soil that gives Chablis wines their typical mineral vibe. After fermentation in a mix of vats and barrels, the finished wine rests on the lees for a year to acquire structure and complexity.
