Henri Champliau is a family-run Burgundian winery, founded by Alexandre Graffard who named it after his grandfather. The company produces exclusively sparkling wines with both the Champenoise and Charmat methods, directly purchasing the grapes from selected winemakers.
The wine, produced with Gamay grapes, is a tribute to Alexandre's grandfather Henri and to his passion for horse races. In particular, the label refers to the victories of his horse Wild Miss in 1955. Fermentation takes place in special horizontal tanks, to guarantee maximum contact with the lees and the full development of the aromatic range. According to the ancestral method, fermentation is then interrupted by lowering the temperature.
Wild Miss 55 Methode Ancestrale Rose has a clear color with pink tones, brightened by a dense and fine mousse. The aromatic profile is rich, fresh, and intensely fruity, with notes of grapes, cherries, and raspberries. On the palate, the wine is lively with a marked acidic streak that well balances the natural sugar residue of the unfermented grape sugars. The finish is persistent and recalls fruity notes. It's the perfect wine for a delicious summer aperitif with some spicy Asian recipes or with a red fruit tart.
