Founded in 1991 in the Ribeira Sacra by Pedro Rodriguez Perez with the help of his family, Adegas Guimaro is a Spanish winery that produces excellent wines based on indigenous varietals grown organically and using traditional production techniques.

Produced in extremely limited quantities (only 800 bottles), Finca Pombeiras is a blend composed primarily of Mencía, with roughly equal additions of Brancellao, Merenzao, Garnacha, Mourvèdre, Feteasca Negra, and Sousón. The grapes come from a vineyard over seventy years old located on one of the Guímaro family's oldest estates in the Ribeira Sacra, approximately 350-400 meters above sea level. Here, the vines enjoy southern exposure and are rooted in slate and granite soils. After harvesting and spontaneous whole-cluster fermentation, the wine ages for a year in 500-liter oak barrels.

In the glass, the wine reveals a deep garnet color. Its aromatic profile is broad and complex, with notes of ripe red fruit, hints of violet, aromatic herbs, and sweet spices on a light mineral undertone. On the palate, it is elegant, rich, and smooth, with fine tannins and balanced acidity. It has good structure and a long, refreshing finish. Try it with braised beef or braised rabbit with polenta.
