Located between the municipalities of Viré and Clessé, in the small hamlet of Quintaine, Domaine Guillemot-Michel is a family-run winery founded in the 1980s by Pierrette Michel and her husband, Marc Guillemot. Today, the couple manages it alongside their daughter, Sophie, and her husband, Gautier. The winery converted to biodynamic farming in the 1990s. The estate covers approximately 6.5 hectares of vineyards planted with Chardonnay and located in the heart of the Viré-Clessé appellation, one of the three crus of the Mâconnais region.
Vire Clessé Quintaine is the winery's flagship wine, made with Chardonnay grapes sourced from the estate's vineyards in the Viré-Clessé appellation. After harvest, fermentation occurs spontaneously in concrete tanks with indigenous yeasts. The finished wine then ages on the lees for several months until bottling in spring.
On the nose, the wine reveals a fresh and pure aromatic profile with notes of citrus, pear, and tropical fruit. On the palate, it is lively, juicy, and crisp, with a pronounced acidity and a long, refreshing finish with a touch of bitterness. Try it with scallop carpaccio, rabbit rillette, or seared white fish.
