This stunning single varietal Chardonnay is made in an elegant Burgundian style with the grape must fermented in French oak barrels and matured for a year before bottling. The result is an opulent, generous Chardonnay which opens with seductive notes of vanilla, tropical fruit and roasted almonds.
On the palate there is a creamy, smooth texture, full body and ripe stone fruit and mango flavours which linger long on the tongue. The firm structure and intense flavour profile make this wine ideal for ageing over the next five or so years, but it is also ideal to enjoy now alongside roasted chicken, pan-fried fish, or a rich mushroom risotto.
Domaine du Castel is widely considered one of Israel’s top wineries despite its humble origins and tiny annual production figures. The story began in the 1970s when Eli Ben Zaken arrived in Israel with his family from Milan and purchased a small farm near Jerusalem. In 1988 he decided to plant the first modern vineyard in the Judean Hills and in 1995 he released his first wine, the Grand Vin, after teaching himself how to make wine from the books of Emile Peynaud.

overall i had a positive experience, they have a wide range of wines, some which are hard to find anywhere else - the main reason i still buy from them, plus the discounts are fair and often, but... their codes for the first offer only works at the first offer, which if fine, but then why would you send me the voucher in each package i order, why spam me on the email and every time i log in on the website? this is really bothering me... then their rewards points system is useless, first of all because you only get peanuts even after spending €250 on an order, but even those peanuts will expire if you won't order again soon, which is unfair, to say the least... and lastly, if you get a corked wine, a wine with any deffect or a wine that leaked (my last order contained a bottle of $100 Caymus Cabernet with a leaking cork, which made the wine tasted cooked and flat), they have no procedure put in place for you to replace or return the wine or to get a refund or replacement - none, which is a big no no no for any wine collector... so all in all i give it 3 stars for now
