Domaine Besson is a fourth-generation family-run winery in Chablis, France. The estate spans approximately 21 hectares across various zones of the appellation, including plots in Premier Cru and Grand Cru areas.

The Chardonnay grapes are sourced from the Vaillons vineyard, covering approximately 2.5 hectares, which is managed sustainably with minimal chemical use. Here, the vines thrive in classic Chablis soils composed of Kimmeridgian clay-limestone. Following hand-harvesting, fermentation takes place primarily in temperature-controlled stainless steel tanks, with a small portion (less than 10%) occurring in oak barrels. The finished wine is then aged on the lees for 12 to 18 months. This winemaking and aging process produces wines of great balance, retaining their fresh, mineral character while gaining added texture and complexity from the wood.

In the glass, the wine reveals a fragrant character, with initial notes of fresh fruit such as apricot, pear, and melon, interwoven with floral hints and a touch of spice, all set against a distinctive backdrop of flint and oyster shell. On the palate, it is taut and juicy, with a soft, rounded texture. It is fruity, fresh, and lively, featuring a clear mineral streak and vibrant, refreshing acidity. The finish is long, with savory notes and fruity hints. Try it with quiche Lorraine, pan-seared seafood, ricotta and spinach ravioli, pumpkin gnocchi, or salmon and avocado tartare.
