Known as the birthplace of sparkling wine, Limoux has been producing traditional method bubbly since 1544. The Antech estate has been producing these fabulous sparkling wines for six generations and the family are regarded as the region’s top producers of Blanquette de Limoux. These days the winery is run by brothers Georges and Roger along with Georges’ daughter Francoise Antech who ranks among France’s most talented female winemakers.
This stunning Limoux Tradition is composed of 90% Mauzac, 5% Chadonnay and % Chenin Blanc. Following the harvest the wine is fermented and then undergoes a second fermentation in the bottle just like its more famous cousins, the sparkling wines of the Champagne region. After resting for 15 months with the lees the wine is finally deemed ready for release. This complex process produces a wonderfully fresh bubbly which bears the distinctive rich and well-rounded character of the Mauzac grape.
On the nose there are generous aromas of green apple and ripe white peaches which are also found on the palate. The first sip is crisp and vibrant with plenty of acidity and a subtle hint of sweetness from the modest dosage of 10 grams per litre.
