In Philip Kuhn's opinion, there is no standard recipe for good wine. He suggests that carefully looking after the vines and vineyards is the first part of creating memorable wines. He then looks at the vinification process. Grapes are hand harvested and the grapes are gently pressed. Fermentation is carried out in fermentation tanks that are temperature controlled. With total control of fermentation, the quality and consistency of the wines can be virtually guaranteed.
The red wine musts are often fermented for up to 3 weeks (following de-stemming) with their skins and matured in oak for at least 15 months.
The colour is quite a vibrant ruby while the nose is a fantastic mix of strawberry, plums, cherries and nuts but with herbs and a hint of menthol too.
The palate is as intriguing – the fruit displayed on the nose comes through with cherries, raspberry and plum coming through with hints of chocolate and leather making this wine delightful! A medium weight wine, the acid and tannins are present but not massively so resulting in a wine that is not only great with food but also very pleasant on its own.
The finish is medium and smooth with a vanilla note.
Food matches include oily fish, white meats, chicken and pork. Maybe even a rich chocolate dessert.
