Cabernet Sauvignon
Domaine Naturaliste Discovery Cabernet Sauvignon 2017
Cellar for up to 7 years. No need to decant before serving.
Domaine Naturaliste was founded by Bruce Dukes who has had an illustrious 25-year career as a winemaker including stints at the renowned Pierro Winery in Margaret River and Francis Ford Coppola’s Niebaum-Coppola in Napa. The winery’s vineyards are located on the north-east of Margaret River in the highly sought-after Wilyabrup sub-region, just 7km from the Indian Ocean.
Conditions here are ideal for premium winemaking thanks to the Mediterranean-style climate with sunny summer days cooled by breezes from the nearby coast. The vines are planted on well-draining gravel and loam soils which help to preserve the elegance and aromatics of each variety.
To create this delicious Cabernet Dukes ferments and matures each parcel separately to maintain maximum control over the blending process. The young wine is matured in French oak barrels for 12 months to add balance and complexity. The result is a vibrant, fruit-forward Cabernet with hints of mint and eucalyptus mingling with dark cassis, blackberry and black cherry flavours. On the palate there is a generous full body, ripe tannins, a silky smooth texture, and a long, clean finish. Pair with hearty red meat dishes like barbecued ribs, steak or a hearty beef stew.
