This delicate Blanc de Blanc Champagne is superb enjoyed as an aperitif alongside fresh oysters, aged parmesan cheese or smoked salmon canapes. In the glass there’s a gentle stream of tiny bubbles and delightful aromas of acacia flowers, hawthorn and ripe white peaches. A subtle salty minerality characteristic of the chalky terroir combines harmoniously with typical Chardonnay varietal flavours of lemon zest, green apples and a crisp, tongue-tingling acidity.
The small Forget-Brimont house that produces this Blanc de Blanc uses only the best Chardonnay grapes which are manually-harvested from their own vines in Chigny les Roses, Ludes, Sermiers and Mailly. Located on Montagne de Reims’ northern flanks, these vineyards have a cool microclimate which gives the Champagne a vivacious acidity and mouthwatering freshness.
This non-vintage Champagne is a coupage of three different vintages which is then aged for 30 months in a traditional chalk cellar 15 metres underground. Since the Champagne region can suffer from poor weather conditions, blending across years ensures consistency and quality. Producer Michel Forget also insists on avoiding insecticides, pheromones and anti-rot treatments in order to treat the natural world with respect. His philosophy is simple; to produce the best Champagne possible while preserving the natural environment that enabled him to craft this wine.
