The ideal partner for a hot summer’s day spent relaxing by the pool or at the beach, this vibrant rosé is made with one of the noblest of Italian grapes, Nebbiolo. Situated in the upper Piedmont between the imposing Alps and the flat Po Valley, the Cantalupo estate has been making this characterful pink wine since 1992 from their 35 hectares of gently rolling vineyards. The wine takes its name “Il Mimo” or “The Mime” from a rare ancient mime mask found close to the vineyards in Ghemme.
To preserve the fresh, bold character of the wine the estate allows the Nebbiolo grape must to be in contact with their skins for just a few hours until sufficient colour and flavours have been extracted. This light-handed approach to winemaking showcases the seductive fruity aromas and flavours of the Nebbiolo grape like luscious raspberries, strawberries and redcurrants along with subtle herbal undertones.
Since this rosé is medium bodied and has slightly more tannins than lighter styles of pink wine, it makes a very versatile dining companion. Excellent pairings include Italian antipasti, grilled fish or even a classic plate of Vitello tonnato.
