Antinori Cervaro della Sala 2017
The Antinori Cervaro Della Sala, a blend of Chardonnay and the indigenous Italian varietal Grechetto, is a rich, luscious, and full-bodied style of white wine. Intense aromas of citrus, pear and vanilla are followed on the palate by sweet notes of creamy peach, butter, and tropical fruit. Well balanced acidity leads the way on the soft, mineral laden finish, with just a hint of hazelnut lingering on the tongue.
New world in style, this wine would pair well with rich seafood dishes, such as baked salmon, fresh boiled langostine or lobster dipped in butter, or a crab risotto.
The Antinori Family has roots going back to the 1200’s in winemaking, and has become a powerhouse name in the industry. With holdings on almost every continent, they are experts in picking out estates to invest in, and the Castello Della Sala estate is no exception. This estate was purchased by the family in 1940, from the Cervaro family, and they have been making this particular wine since 1985. Upon picking the grapes for this wine they undergo a brief period of skin contact, after which they are crushed and both the primary and malolactic fermentations occur in barrel. Following fermentation, the wine is bottled and aged for several months at the estate before being released
