A modest dosage of 8 grams per litre provides a subtle touch of sweetness to balance the crisp acidity. The graceful character of this Grand Cuvee means it is perfect as an aperitif before dinner or as an accompaniment to fine fish dishes or Asian cuisine with a touch of spice.
Created using the same method that is used for the sparkling wines of Champagne, the wine undergoes a second fermentation in the bottle to produce the fine, persistent bubbles. It then spends 18 months maturing with the lees which helps to add rich pastry and nut flavours and aromas to the finished wine.
